Mexi Beef Chili Mac
No need for boxed mixes when you can make your own Southwest-inspired meal in about the same time.

1 pound
lean ground beef
3 tablespoons
chili powder
2 teaspoons
cumin, ground
1-1/2 teaspoons
garlic powder
3/4 teaspoon
oregano, ground
1/2 teaspoon
red pepper flakes, ground
1/2 cup
green bell pepper, chopped
1/4 cup
onion, chopped
1 clove
garlic, minced
1 can
diced tomatoes, 14 1/2 oz.; Mexican style, undrained
1 can
tomato sauce, 8 oz.
3/4 cup
elbow macaroni, uncooked
3/4 cup
water
1/2 teaspoon
salt
Cooking Instructions..........................................................
- To make spicy seasoning mix, combine chili powder, cumin, garlic powder, oregano and red pepper. Set aside 2 teaspoons. Store remainder in airtight container for later use. (Shake before using.)
- Wash hands. Heat 3-quart saucepan over medium. Add ground beef, bell pepper, onion and garlic, breaking up beef into 3/4-inch crumbles. Cook 8 to 10 minutes or until beef is no longer pink. Pour off drippings.
- Stir in remaining ingredients and 2 teaspoons seasoning mix; bring to a boil. Reduce heat; cover tightly and simmer 15 minutes.
- Remove from heat; let stand 5 minutes.
Serving Suggestion:
Serve with a fresh green salad. Refrigerate leftovers.
