Chicken Apple Crunch Salad Sandwich

Tired of ordinary chicken salad? Try this version. The apples and celery add crunch and the cranberries add a sweet and delicious twist to the ordinary chicken salad. This recipe is courtesy of the United States Olympic Committee and Tyson Foods.

Chicken Apple Crunch Salad Sandwich

Ingredients.........................................................................

1 pound Tyson® Chicken Breast Strips (Boxed), roughly chopped
3 cups apple, Granny Smith, peeled and diced
3/4 cup celery, diced
3/4 cup cranberries, dried
1/3 cup green onion, chopped
3/4 cup mayonnaise, fat-free or light
3/4 cup sour cream, fat-free or light
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 teaspoon cinnamon
8 slices whole wheat bread

Cooking Instructions..........................................................

  1. Toss Tyson’s Fully Cooked Chicken Breast Strips with Granny Smith Apples, celery, dried cranberries and green onion.
  2. Prepare sauce by combining mayonnaise, sour cream, lemon juice, salt, pepper and cinnamon. Stir gently.
  3. Add the chicken mixture to the sauce and toss well to coat.
  4. Divide the chicken mixture into four even amounts and spread onto four slices of bread. Top with remaining four slices of bread to create sandwiches.
Serving Suggestion: Serve with a side of celery and carrot sticks
