Chicken Apple Crunch Salad Sandwich
Tired of ordinary chicken salad? Try this version. The apples and celery add crunch and the cranberries add a sweet and delicious twist to the ordinary chicken salad. This recipe is courtesy of the United States Olympic Committee and Tyson Foods.

Tyson® Chicken Breast Strips (Boxed), roughly chopped
3 cups
apple, Granny Smith, peeled and diced
3/4 cup
celery, diced
3/4 cup
cranberries, dried
1/3 cup
green onion, chopped
3/4 cup
mayonnaise, fat-free or light
3/4 cup
sour cream, fat-free or light
2 tablespoons
lemon juice
1/4 teaspoon
salt
1/4 teaspoon
pepper
1/3 teaspoon
cinnamon
8 slices
whole wheat bread
Cooking Instructions..........................................................
- Toss Tyson’s Fully Cooked Chicken Breast Strips with Granny Smith Apples, celery, dried cranberries and green onion.
- Prepare sauce by combining mayonnaise, sour cream, lemon juice, salt, pepper and cinnamon. Stir gently.
- Add the chicken mixture to the sauce and toss well to coat.
- Divide the chicken mixture into four even amounts and spread onto four slices of bread. Top with remaining four slices of bread to create sandwiches.
Serving Suggestion:
Serve with a side of celery and carrot sticks
