
New York, NY - The National Society for Healthcare Foodservice Management (HFM) has announced the winners of the 5th Annual Culinary Competition, sponsored by Tyson Food Service, a division of Tyson Foods, Inc.
The winners are:
GOLD
Lisa Poggas, director of nutrition services, and Daniel Skay, manager/executive chef, Parker Adventist Hospital, Parker, CO, for their Machaca Flat Iron Steak with Cilantro Tomalito and Corn Chile Sauce
SILVER
Angelo Mojica, director of foodservice, and Shawn Dolan, executive chef, UNC Healthcare, Chapel Hill, NC, for their Coffee Bronzed Flat Iron Steak with Curried Banana Pierogi, Green Apple-Jicama Slaw, and Chili Pepper Relish
BRONZE
Lori Corbin, manager of nutrition services, and Chad Nurminen, executive chef, SMDC Health System, Duluth, MN, for their Pan Seared Chipotle Flat Iron Steak with Southwestern Succotash, Dressed Watercress Chili Oil and Avocado Crème Fraiche
Five teams were chosen to compete live for the coveted gold, silver and bronze medals during the 2009 conference held at the Renaissance Esmeralda Resort & Spa in Indian Wells, CA. The teams were judged on flavors, taste, creativity and presentation.
Entrants were required to submit an original, healthy and creative recipe, including side dishes and sauces to balance the plate, using the featured Tyson Food Service product - 5-oz., IBP® Flat Iron Everyday Steaks™. The nutritional criteria for the competition required that the recipe serving contain less than 600 calories, 20 grams of fat and 1,000 mg of sodium.
