Tyson® Unbreaded Right Size™ Breast Filets, Fully Cooked (#15940-928), 2.25 oz. 36 piece
Arrange filets on sheet pan lined with baking paper. Cover and heat in preheated convection oven at 350°F for 10 to 12 minutes or until internal temperature reaches 140°F for 15 seconds. Hold hot above 135°F.
 
Grilled Pineapple Pico
Pineapple slices, fresh, grilled & diced 4 oz.
Red onion, fresh, diced 2 oz.
Orange bell pepper, fresh, diced 2 oz.
Asian sweet chile sauce, commercially prepared 1/4 cup
Lime juice, fresh 1 tsp
Cilantro, fresh, chopped 1 tbsp
Jalapeño peppers, fresh, diced 1/8 cup
Red Fresno peppers, fresh, diced 1/8 cup
Combine pineapple dices, onion, bell pepper, chile sauce, lime juice, cilantro, jalapeños, and Fresno peppers in a bowl and stir to blend. Cover and hold refrigerated at or below 40°F.
 
Sesame Teriyaki Mayo
Mayonnaise 1-1/2 cup
Teriyaki sauce, commercially prepared 1 tbsp
Sesame oil 1 tbsp
Sesame seeds, toasted 1 tbsp
Cayenne pepper, ground 1/8 tsp
Combine mayonnaise, teriyaki sauce, sesame oil, sesame seeds, and cayenne pepper in a bowl and whisk to blend. Cover and hold refrigerated at or below 40°F.
 
Hawaiian rolls, 2-inch, sliced for sandwiches, toasted 36
Wright®Natural Applewood Smoked Bacon, Thin (#40152-616), cooked crisp 36 slices
To assemble single serving: Place 3 rolls on flat work surface, toasted sides up; spread 1 teaspoon mayonnaise on each roll. Layer 1 filet, 1 strip bacon (halved), and 1 tablespoon pineapple pico on bottom half of each roll. Close with top half of each roll and secure with sandwich pick. Arrange on plate.
