Chicken Artichoke Pepper Crostini

  1. Preheat oven to 350°F. Slice the baguette into thin slices and place them on a baking sheet: drizzle with the olive oil. Bake for 12 minutes or until crispy. Set aside.
  2. While the bread is crisping, combine the mayonnaise and roasted red peppers in a food processor. Make sure the peppers are drained well to prevent the spread from becoming too runny. Add the artichoke hearts and continue to process until smooth. Cover and refrigerate until ready to assemble.
  3. Prepare Grilled & Ready Chicken Breast Strips according to package directions. Cut up chicken so that it will fit on bread slices.  Set aside.
  4. Heat a small pan over medium-high heat. Spray with non-stick spray. Sauté onions, stirring often, 6 to 7 minutes, or until soft.
  5. To assemble: Spread generous amount of red pepper sauce on each slice of bread, add a piece of chicken, and top with onions.
