Chicken Florentine Pizza

Ingredients

  • 1 pound Chicken Tenderloins
  • 1 tablespoon garlic oil
  • 1 teaspoon dried Italian seasoning
  • 1 prebaked pizza crust, 16-oz.
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1 package frozen spinach, 10-oz., thawed and squeezed dry
  • 2 tablespoons sun dried tomatoes, marinated in olive oil; drained
  • 1/4 cup Parmesan cheese, grated


Cooking Instructions

  1. Preheat oven to 425°F. Cut chicken into 1-inch pieces.
  2. Heat garlic oil in large skillet to medium. Add chicken and cook 10 minutes or until done (internal temp 170°F). Stir in Italian seasoning and remove from heat.
  3. Combine ricotta and mozzarella; spread on prebaked pizza crust. Spread spinach over cheese mixture; add chicken and tomatoes. Sprinkle with Parmesan cheese.
  4. Bake pizza 10 to 15 minutes or until crust is golden brown and cheese is melted.

Serving Suggestion: Cut into 8 portions for 4 servings or cut in smaller, bite-sized portions to use as an appetizer. Refrigerate leftovers.

Substitution Tip: One clove of garlic, minced and 2 tablespoons of olive oil may be substituted for the garlic oil.   Try using Tyson® Individually Frozen Chicken Breast Tenderloins.  Increase cooking time for chicken by about one-third.
