Chicken Pita Fajita

Chicken Pita Fajita

Ingredients

  • 8 strips Grilled & Ready® Fully Cooked Frozen Fajita Chicken Strips
  • 1 cup chicken broth
  • salt, to taste
  • 1 cup rice
  • 1/2 cup black beans, canned, drained, rinsed
  • 1 small green bell pepper, seeded, diced
  • 1 small onion, diced
  • 2 pita bread pockets
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup sour cream
  • 1/2 cup salsa


Cooking Instructions

  1. Bring the chicken broth to a boil in a small saucepan. Add in a touch of salt to flavor, and stir in the rice. Cover and reduce heat and cook 15-20 minutes, or until the broth is absorbed. Stir in the black beans. Set aside.
  2. Preheat oven to 350°F. 
  3. In a small skillet over medium heat, prepare Grilled & Ready Chicken Strips according to package directions.  When almost heated through add the peppers and onions to the skillet. Cook, stirring 4 to 5 minutes, or until golden on the outside. Combine with the rice and beans.
  4. Place pitas on a baking sheet and heat in oven 2-3 minutes or until warmed. Cut the pitas down the middle and open to form “pockets”. Divide cheese between each pita. Fill with the chicken mixture and top with sour cream and salsa.
