Chicken Roma

Ingredients

  • 4 Grilled & Ready® Fully Cooked Frozen Chicken Breast Fillets
  • 6 ounces Capellini pasta, cooked, drained
  • 2 teaspoons olive oil
  • 1 teaspoon garlic, minced
  • 1 jar quartered artichoke hearts, drained
  • 1/2 teaspoon lemon pepper seasoning
  • 1/3 cup prepared Alfredo sauce
  • 1 teaspoon chicken broth
  • 2 tablespoons Romano cheese, grated, divided
  • 1 Roma tomato, seeded, diced
  • 1 tablespoon fresh parsley, chopped


Cooking Instructions

  1. Prepare pasta according to package directions.
  2. Combine olive oil, garlic, artichoke hearts and lemon pepper seasoning in skillet and sauté over low heat for 2-3 minutes stirring often until garlic is tender and moisture has evaporated.
  3. Add Alfredo sauce, broth and 1 tablespoon Romano cheese and stir to blend. Simmer over medium-low heat for 3-4 minutes or until thoroughly heated, stirring often.
  4. Add tomatoes and parsley to sauce and stir to blend. Simmer for additional 1-2 minutes.
  5. When ready to assemble, prepare Grilled & Ready® Whole Breast Fillets according to package directions.
  6. To assemble: Toss pasta with half of Alfredo sauce. Place pasta on platter. Arrange Fillets on top of pasta and cover with remaining Alfredo sauce. Garnish with remaining Romano cheese.
