Chicken and Cheese Rice Wraps

If you want to kick up the heat, try adding a little minced fresh jalapeno along with the green chilies.

Chicken Rice Hot Wrap

Ingredients

  • 1 pound Fresh Ground Chicken, seasoned
  • 1 box Three Cheese Rice
  • 3 tablespoons green chilies, chopped,canned
  • 1-3/4 cups water
  • 1/2 cup tomatoes, chopped
  • 12 fat-free (or regular) flour tortillas, 8 to 10-inch


Cooking Instructions

  1. Heat a large nonstick skillet over medium-high. Add chicken; cook, stirring frequently, 6 to 9 minutes or until chicken is browned and juices run clear.
  2. Add rice, seasoning packet, chilies and water to skillet; mix well. Bring to a boil. Reduce heat; cover. Simmer 10 to 15 minutes or until rice is tender and liquid is absorbed. Stir in tomato; let stand 5 minutes.
  3. Heat tortillas according to package directions. Spoon chicken mixture evenly down center of tortillas. Wrap or roll to enclose chicken mixture.

Serving Suggestion: Serve wraps with sour cream and salsa. Refrigerate leftovers.
