Cornish Hen with Lemon  Pepper  Rosemary and Garlic

Ingredients

  • 4 whole Premium Cornish Hen without Giblets , thawed
  • 1 tablespoon lemon pepper
  • 1 tablespoon garlic powder
  • 4 large Roasting Potatoes, cut into quarters
  • 2 tablespoons olive oil
  • 1/2 pound Brussels sprouts
  • 4 teaspoons kosher salt
  • 2 teaspoons pepper
  • 1 tablespoon rosemary


Cooking Instructions

  1. Preheat oven to 350°F.
  2. In a small bowl, mix lemon pepper, garlic powder and rosemary and set aside.
  3. Rinse Cornish hens under cold water.
  4. Rub with spice blend and set aside.
  5. Place Cornish hens in a well seasoned roasting pan and sear hens over medium heat until all sides are golden brown.
  6. Season potatoes and Brussels sprouts with salt and pepper; toss with olive oil and place in roasting pan around Cornish hens.
  7. Place roasting pan in oven for about 20-30 minutes until juices run clear.
  8. Remove from oven. Cut each hen in half down backbone and serve with roasted potatoes and Brussel sprouts.
