Fiesta Beef Ribeye Steaks

Ingredients

  • 4 beef ribeye steaks, cut 3/4-inch thick (about 2-lb.)
  • 2 tablespoons fresh lime juice
  • 1/2 cup Colby cheese, shredded
  • 8 medium flour tortillas, warmed
  • 1 cup salsa


Cooking Instructions

  1. Preheat grill to medium. Sprinkle steaks with lime juice.
  2. Grill steaks, uncovered and turning occasionally, 8 to 10 minutes for medium rare to medium doneness (internal temp 145°F to 155°F).
  3. Slice steaks thinly and top with cheese. Serve in tortillas with salsa.

Tip: To broil, place steaks on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil, turning once, 8 to 10 minutes for medium rare to medium doneness.
