Cooking Instructions

  1. Cut chicken into 1-inch pieces.
  2. Combine chicken, chicken broth, kidney beans, salsa and corn in a large saucepan. Bring to a boil. Reduce heat and simmer, uncovered, 5 to 10 minutes or until chicken is done (internal temp 170°F).
  3. Stir in rice; cover and remove from heat. Let stand 5 minutes.

Serving Suggestion: Top individual servings of soup with shredded Monterey Jack cheese, toasted tortilla strips and sliced avocado. Serve with fresh fruit and cornbread. Refrigerate leftovers or freeze in tightly sealed nonmetallic container or freezer bag for a later meal.

Substitution Tip: To substitute Tyson® Individually Frozen Boneless, Skinless Chicken Tenderloins, rinse off ice glaze before cutting and increase cooking time by about one-third.
