Gorgonzola Flat Iron Steak Salad

Ingredients

  • 10 ounces Grilled & Ready® Fully Cooked Frozen Seasoned Steak Strips 
  • 1/8 cup white wine vinegar
  • 1 tablespoon shallot, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon garlic, minced
  • salt and pepper, to taste
  • 1/4 cup olive oil
  • 1 cup heavy cream
  • 2 ounces Gorgonzola cheese, crumbled, divided
  • 1 tablespoon Parmesan cheese
  • 1/2 pound lettuce
  • 1/2 pound Red Beets, roasted, sliced 1/4"
  • 1/2 cup red onion, sliced
  • 1/2 cup walnuts


Cooking Instructions

  1. In small bowl whisk to blend vinegar, shallots, Dijon, parsley, rosemary, garlic, salt and pepper.
  2. Slowly add olive oil to vinegar mixture while whisking constantly until well blended. Set aside.
  3. Over low heat, stirring constantly, simmer heavy cream until reduced by half. Add half of Gorgonzola and all of parmesan stirring until melted. Keep warm.
  4. Prepare Grilled & Ready® Seasoned Beef Strips according to package directions.
  5. To assemble: Arrange lettuce on plates, top with beet and onion slices. Drizzle dressing over salad. Arrange beef strips down center of salad. Drizzle 2 tablespoons cream sauce over steak. Top with walnuts and remaining crumbled cheese. Serve immediately.
