Greek Chicken Tacos Recipe

The perfect combination of Greek flavors served on a Southwest favorite, these tacos are a deliciously crunchy way to enjoy tasty Mediterranean staples like feta cheese, Kalamata olives and Romaine lettuce.  Inspired by a recipe created by Hungry Girl Lisa Lillien.  Nutritional information may vary from the original recipe.

Greek Chicken Tacos

Ingredients

  • 3 ounces Grilled & Ready® Fully Cooked Refrigerated Oven Roasted Diced Chicken Breast, diced
  • 1/4 cup Romaine lettuce, shredded
  • 2 tablespoons red onions, finely chopped
  • 2 tablespoons roasted red peppers, drained and chopped
  • 1 tablespoon Kalamata olives, roughly chopped
  • 1 tablespoon light vinaigrette dressing
  • 2 taco shells, Use flat-bottomed corn shells, if available
  • 2 dash dried oregano
  • 2 tablespoons feta cheese, crumbled


Cooking Instructions

  1. In a medium bowl, mix lettuce, onion, red pepper, olives and vinaigrette.
  2. Divide chilled Grilled & Ready Diced Chicken Breast between taco shells and sprinkle with oregano.
  3. Top with lettuce mixture followed by feta cheese.
