Onion Herb Chicken & Rice Florentine

These boneless, skinless chicken thighs are cooked up tender and juicy in chicken broth with seasonings.  Serve over spinach and top with Parmesan cheese for a taste that is a unique blend of French and Italian.

Ingredients

  • 6 Boneless Skinless Chicken Thighs, cooked and cut up into bite-sized pieces
  • 14 ounces reduced-sodium chicken broth
  • 2 cups Minute® White Rice, uncooked
  • 1 tablespoon Mrs. Dash® Lemon Pepper Salt-Free Seasoning Blend
  • 1 tablespoon Mrs. Dash® Onion & Herb Salt-Free Seasoning Blend
  • 4 cups spinach
  • 1/4 cup Parmesan cheese, shredded


Cooking Instructions

  1. Bring chicken broth to boil in medium saucepan.
  2. Add Minute® White Rice, Mrs. Dash® Salt-Free Seasoning Blends and chicken; stir. Cover, reduce heat to low and simmer 5 minutes. Remove from heat and let stand 5 minutes.
  3. Add spinach and stir until wilted. Serve topped with Parmesan cheese.
