Savory Chicken Rice Skillet

Savory Chicken Rice Skillet

Ingredients

  • 6 Boneless Skinless Chicken Thighs
  • 2 cups frozen mixed vegetables, thawed
  • 2 tablespoons low fat sour cream
  • 1/2 cup reduced-sodium chicken broth
  • 1 cup Minute® White Rice, uncooked
  • 2 tablespoons Mrs. Dash® Garlic and Herb Salt-Free Seasoning Blend, divided
  • 1 tablespoon olive oil
  • 1 small onion, chopped fine
  • 2 tablespoons Parmesan Romano cheese blend
  • 1/2 cup water


Cooking Instructions

  1. Heat oil in large non-stick skillet over medium high heat. Season chicken with 1 tablespoon Mrs. Dash® Garlic & Herb Seasoning Blend, then add chicken to skillet.
  2. Cook chicken 5 minutes on each side or until cooked through. Remove chicken and keep warm.
  3. Add onions to skillet and cook until tender. Stir in remaining tablespoon of Mrs. Dash® Seasoning Blend, vegetables, chicken broth and water. Bring to a boil.
  4. Stir in Minute® Rice. Cover and remove from heat. Let stand 5 minutes, or until liquid is absorbed.
  5. Add sour cream and cheese; stir to blend. Serve topped with chicken.

To substitute Tyson® Individually Frozen Boneless, Skinless Thighs, rinse off ice glaze and pat dry before following recipe directions.  Bone-In Thighs can also be used in this recipe.  Increase cooking time by about one-third.
