Stuffed Green Peppers with Beef Steak Tips and Herbs

Ingredients

  • 1 package Tyson® Beef Steak Tips in Bourbon Sauce, 17-oz.
  • 1 cup brown rice, cooked
  • 1/4 cup scallions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 4 medium green bell peppers, tops trimmed and seeds removed
  • 2 teaspoons Panko bread crumbs


Cooking Instructions

  1. Preheat oven to 400°F. Coat a shallow baking dish with cooking spray.
  2. Empty contents of Tyson® Beef Steak Tips in Bourbon Sauce package into a large bowl. Using two forks, shred the meat into ¼-inch thick pieces.
  3. Add rice, scallions, parsley and oregano and mix well.
  4. Spoon the mixture into prepared bell peppers and place side-by-side in prepared dish. Sprinkle the tops with bread crumbs (½ teaspoon per pepper).
  5. Bake for 25-30 minutes, until peppers are tender and tops are golden brown.

Serving Suggestion: Choose a baking dish that fits the peppers snugly so they don’t tip over. You may also slice a thin strip from the bottom of each pepper to make it flat. Just make sure not to slice through to the center.
