Sunday Dinner Chicken Meatloaf

Ingredients

  • 1 pound Fresh Ground Chicken
  • 1 envelope instant onion soup mix
  • 1/2 cup seasoned dry breadcrumbs
  • 3/4 cup chunky salsa
  • 1 egg, beaten
  • 1/4 teaspoon pepper


Cooking Instructions

  1. Preheat oven to 375°F. In large bowl, combine chicken, onion soup mix, breadcrumbs, 1/2 cup salsa, egg and pepper; mix well. In 8-inch square baking pan, form mixture into 8 x 4-inch loaf.
  2. Bake meatloaf 20 minutes. Top with remaining 1/4 cup salsa. Bake 35 to 40 minutes or until done (internal temp 170°F).
  3. Remove from pan. Let stand 5 minutes.

Serving Suggestion: Slice meatloaf and serve with steamed green beans and buttered potatoes. Refrigerate leftovers.

Tip: For a more traditional meatloaf taste, substitute ketchup for salsa.
