1. Preheat oven to 350°F. Remove neck and giblets.
2. Rinse chicken inside and out with cold running water, pat dry with paper towels.
3. Sprinkle chicken inside and out with salt and pepper to taste. Place chicken, breast side up, on rack in shallow roasting pan.
4. Roast, uncovered, at 350°F for 20 minutes per pound or until juices run clear and kitchen meat thermometer inserted in inner thigh registers at least 180°F.
