1. Preheat grill to medium-high. Mix mustard, apricot preserves and ginger in a small bowl. Brush some of the mustard mixture on chicken.
2. Place chicken on grill about 6 inches from heat. Grill chicken, brushing frequently with remaining mustard mixture, 6 to 8 minutes on each side or until done (internal temp 170°F).
