Season chicken with salt and pepper, and sear for 3-5 minutes or until golden brown. Flip and sear on the opposite side for 3-5 minutes.
In a small mixing bowl combine honey, hoisin, soy sauce, garlic chili saice, 5-spice and 1 tsp. ginger. Add sauce, along with chicken stock, into skillet with chicken. Cover and cook on medium for 12-15 minutes, or until chicken is done.
Make pickled cucumbers by heating vinegar, sugar, wasabi and remaining 1/4 tsp. ginger in a small sauce pot just until sugar is dissolved. Pour over sliced cucumbers and refrigerate until ready to use.
Make green onion mayonnaise by whisking together mayonnaise and sliced green onions. Refrigerate until ready to use.
Prepare biscuits according to package directions.
Build biscuit sandwich by starting with a layer of green onion mayonnaise, topped with prepared chicken and picked cucumbers.
