Warm oil in a large skillet and sauté onions and garlic until transparent. Add green chilies, rice, and black beans. Stir until combined and warm. Add to bowl.
In the same pan add a little oil and the Grilled & Ready breast fillet. Season both sides of fillet with cumin, cayenne pepper and a drizzle of fresh lime juice. Warm breast thoroughly. Remove from pan and slice fillet into thin slices. Place slices back into pan and add enchilada sauce. Stir to coat and warm sauce.
Add sauced chicken to bowl.
Top with lettuce, green onions, avocado, olives and Greek yogurt. Garnish with a lime wedge.
