Cooking Instructions

  1. Cook tortellini according to package instructions and drain using cold water to quickly stop further cooking.  Drain and keep refrigerated until ready to use.
  2. Make basil pesto by combining pine nuts, Parmesan cheese and herbs in a food processor.  Pulse until coarsely chopped.  Slowly add in the olive oil while the processor is on until fully incorporated and smooth.  Season with salt and pepper.
  3. In a large bowl toss Grilled & Ready chicken, tortellini, carrots, tomatoes, onions and artichoke hearts with 2/3 cup pesto sauce.  Refrigerate until ready to serve.
