Cooking Instructions

  1. Heat oil and garlic in a large skillet over medium-high heat.  Add chicken and brown for 5 minutes.
  2. Add soy sauce, hoisin sauce, chicken broth and uncooked rice. Stir to mix, bring to a boil, cover and simmer for 5 minutes, or until the internal temperature of the chicken reaches 165°F. 
  3. In a mixing bowl, combine cole slaw, carrots, water chestnuts, red onion, pineapple and vinegar.  Mix well, set aside.
  4. Evenly divide the rice and chicken mixture to each lettuce cup and top with the slaw mix for serving.
