Ingredients

  • 1/3 cup (3 ounces) Grilled & Ready® Oven Roasted Diced Chicken Breast

  • 1/4 cup romaine lettuce, shredded

  • 2 tablespoons red onions, finely chopped

  • 2 tablespoons roasted red peppers, drained and chopped

  • 1 tablespoon Kalamata olives, roughly chopped

  • 1 tablespoon light vinaigrette dressing

  • 2 taco shells; use flat-bottomed corn shells, if available

  • 2 dashes dried oregano

  • 2 tablespoons feta cheese, crumbled

Cooking Instructions

  • In a medium bowl, mix lettuce, onion, red pepper, olives and vinaigrette.
  • Divide chilled chicken between taco shells and sprinkle with oregano.
  • Top with lettuce mixture followed by feta cheese.
