Sprinkle chicken with salt and pepper. Put flour in resealable plastic bag. Add wings to bag a few at a time; shake to coat.
Heat oil in large, deep nonstick pot over medium-high. Cook wings in batches, about 6 minutes per batch, until golden brown, adding additional oil if necessary.
Add mushrooms, tomatoes, wine, thyme and all of chicken to pot. Bring to a boil; reduce heat to medium-low. Cover and simmer 30 minutes or until chicken is done (internal temp 180°F). Taste sauce and season with additional salt and pepper if needed.
