Cooking Instructions

  1. Heat wine in a small sauce pot over medium heat. Reduce for 5-7 minutes, add tomatoes and rehydrate for 10 minutes. Allow liquid to cool.
  2. Make Italian seasoned butter by combining wine and tomatoes with all remaining ingredients in a food processor and pulse until smooth.
  3. Slip your hand between the meat and skin of chicken to loosen. Spread Italian seasoned butter between skin and meat. Refrigerate overnight.
  4. Preheat an outdoor grill to a low heat setting. Place chicken breasts onto the grill. Turn chicken using tongs; cover and grill for 35-40 minutes or until internal temperature reaches 180oF.
