Make Garlic Herb Butter by combining the following in a food processor: butter, garlic, salt, pepper, 3 teaspoons oregano, 2 teaspoons thyme, and 1 teaspoon rosemary. Pulse until smooth.
Slip your hand between the meat and skin on the breast and thigh sections of the chicken to loosen. Spread Garlic Herb Butter between skin and meat. Refrigerate overnight.
Soak wood chips in water for a minimum of 20-30 minutes. Drain wood chips and place into your smoker. Using your desired smoking method, heat the smoker to 300-350oF.
Slice the lemon into wheels and place 2-3 onto the skin with the fresh herb sprigs. Cross the legs of the chicken and tie them together with kitchen twine. Tie twine once around the chicken and over the herbs to hold them in place. Lift the wing tips up and tuck them under the bird.
Place the chicken into the hot smoker and cook for 2 hours or until internal temperature reaches 180oF. Once cooked, discard the twine.
