Cooking Instructions

  1. Pre-heat oven to 350˚F. Spray a 13x9-inch baking dish with non-stick cooking spray.
  2. Heat oil in a large skillet over medium-high heat.  Add chicken and brown for 3 minutes per side. Add mushrooms and sauté for an additional minute.
  3. Stir in the soy sauce, hoisin sauce, Sriracha sauce, pineapple chunks with juice and simmer for 2 minutes.
  4. Spread uncooked rice in prepared baking dish.  Top with chicken mixture and chicken broth.  Cover and bake for 15 minutes, or until the internal temperature of the chicken reaches 165˚F.
  5. Garnish with green onions.
