  1. Preheat oven to 350°F.
  2. Melt the cashew butter with unsalted butter in a small sauce pan. Remove from heat and stir in all the remaining ingredients. Cool the mixture and roll in parchment paper, wrap in plastic wrap and place in the freezer. Once frozen, slice the butter log in coins.
  3. Carefully slip your hand between the meat and skin to loosen. Spread butter mixture between skin and meat.
  4. Place chicken breasts in a baking pan, cover and cook for 30 minutes. Uncover and continue cooking for an additional 15 minutes or until internal temperature is 180°F.
