Combine all ingredients in a Dutch oven style pot, refrigerate and let marinade overnight.
Prepare charcoal grills until ready to cook (ash in color). Place Dutch oven pot with marinated chicken directly on the grill, cover and cook for 1 hour or until chicken is tender and has reached an internal temperature of 180°F. Remove chicken from liquid and place leg quarters directly on grill and cook for 2 minutes per side.
