Cooking Instructions

  1. Prepare vinaigrette by whisking together vinegar, garlic and mustard.  Slowly drizzle in the olive oil while continuing to whisk.  Season with salt and pepper.
  2. Marinate olives and tomatoes in 2 tablespoons of the prepared vinaigrette for 5-10 minutes. 
  3. In a large mixing bowl combine the Grilled & Ready chicken, tomatoes, olives and arugula.  Drizzle with vinaigrette as desired. 
  4. Serve on a large platter topped with cheese, pine nuts and croutons.
