Ingredients
3/4 cup (6 ounces) Simply Roasted Chicken Breast Chunks
1 tablespoon light olive oil
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil
1 package spring mix, washed
1 red onion, thinly sliced
1 grape tomatoes
5 ounces mozzarella cheese
3 ounces black olives, whole
3 ounces green olives, whole
1 ounce whole almonds, toasted
1 ounce pistachio nuts, toasted
Cooking Instructions
- Combine chicken breast with olive oil, parsley and basil; set aside.
- To assemble: Arrange spring mix on each plate. Top with red onions, tomatoes, mozzarella, olives and nuts. Top with 3 ounces marinated diced chicken.
- Serve with side of dressing of your choice.
