Ingredients

  • 12 ounce Grilled & Ready® Chicken Breast Strips

  • 2 teaspoon balsamic vinegar

  • 1 cup tomato, small chopped, red, yellow, cherry, or any variety

  • 8 slice fresh mozzarella cheese, chopped small

  • 1/4 cup pesto sauce

  • 2 pita breads

Cooking Instructions

  • Place the balsamic vinegar in a small sauce pan, bring to a boil and reduce to a simmer. Reduce the vinegar by 1/2 until it becomes thick, sweet and syrupy. Set aside.
  • Prepare Grilled & Ready® Chicken Breast Strips according to package directions. Place in a mixing bowl and add chopped tomatoes, fresh mozzarella and pesto. Toss to combine evenly.
  • Warm pitas, cut each in half, and open pita pocket. Place an even amount of the caprese chicken mixture inside each pita pocket. Drizzle the top of each with a 1/2 tsp. of reduced balsamic syrup to finish the sandwiches.
