Ingredients

  • 6 ounce

  • 1 can black beans, 15 ounces, rinsed and drained

  • 1 avocado, diced

  • 1 cup brown rice, cooked

  • 1/2 cup salsa

  • 2 tablespoon cilantro, finely chopped

  • 1 tablespoon lime juice, fresh

  • 1 butter lettuce, 4 leaves

  • 2 scallions, chopped

Cooking Instructions

  • Heat Grilled & Ready Chicken according to package directions.
  • In a large bowl gently toss together beans, avocado, brown rice, salsa, cilantro and lime juice.  Using four pieces of butter lettuce as "cups", divide mixture among lettuce cups.
  • Add chicken to each lettuce cup and sprinkle with scallions.
