1/4 cup rice vinegar
1/4 cup reduced-sodium soy sauce
2 tablespoon sesame oil
2 tablespoon sriracha sauce
2 tablespoon creamy peanut butter
10 ounce spring green lettuce blend
2 medium carrots, shredded
1/2 cup mushrooms, thinly sliced
1/2 cup bean sprouts
1/4 cup almonds, slivered, toasted
- Prepare Grilled & Ready chicken breast strips according to package directions.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sriracha sauce and peanut butter until blended. Set aside.
- In a large bowl, combine salad greens, carrots, mushrooms, sprouts, and chicken. Pour dressing over salad and toss to coat. Sprinkle with almonds and serve immediately.
