1/2 cup Italian dressing
1 (17.5) ounce bag flour tortillas
1 cup dry couscous
1/4 cup fresh Italian parsley leaves, packed
1/4 cup celery leaves, packed
1/2 cup diced green apples
1/2 cup quartered green grapes
1/4 cup diced celery
2 tablespoon crumbled blue cheese
2 tablespoon toasted almonds
- Cook couscous according to package instructions.
- Toss couscous with parsley, celery leaves, chicken, apples, grapes, celery, cheese and almonds with Italian dressing, set aside.
- Heat the tortillas in a dry skillet until lightly toasted. Fill each tortilla with ½ cup of the salad mixture and fold the bottom of the tortilla over the filling and pull towards the fold. Fold in the sides and roll tightly.
